This Web Site is dedicated to all the wonderful folks who work to create a real, traditional American Barbecue experience at home. Real hickory wood-smoke, natural lump charcoal, and low cooking temperatures are what REAL Barbecue is all about!
REAL BARBECUE is a unique, and very American form of cooking. Many people think that barbecue is burgers on the grill, or grilled meat with some sort of barbecue sauce. Nothing could be further from the truth. A real barbecue is meat that is slow cooked at low temperatures over a wood or wood/charcoal fire. I highly endorse natural "lump" charcoal rather than the domestic briquette style charcoal that we are all familiar with. Lump makes food taste like it was cooked over a wood fire insted of the standard charcoal
briquettes. A combination of natural lump charcoal and hickory wood chunks is the magic combination for most small to medium size smokers. Temperature control is the other "magic" ingredient for a good barbecue. Be it in a kettle style grill, or a smoker of some type, you will need to maintain temperatures of 225 - 235 degrees for long periods of time. Wood smoke and slow, low temperature cooking equals real barbecue.
