Barbecued chicken is the easiest thing to barbecue well. Don't par boil the chicken! Stabilize the temperature on your kettle grill or smoker to 285º - 300º F. Rub the chicken pieces with a little salt and pepper or your favorite rub and place the pieces in your smoker. Check in about an hour and if the chicken is browned, turn it over. Once the chicken is browned on both sides, baste with your favorite barbecue sauce (optional) and finish the chicken. You want an internal temperature of 170º F for the chicken to be done properly.
